Here are our selected Forest to Table chefs who share their passion for game meat and exquisite cooking.

René Jantzen

René Jantzen is a passionate hunter who has started his own publishing house, where he recently released his own game cookbook, Jagt Forbi.

He has his own hunting grounds of 179.5 hectares in Brahetrolleborg. Here he hunts exclusively with a rifle.

René Jantzen believes that trophy hunting is the ultimate form of hunting, where it is the old and mainly outdated males in the populations that are sought after. The hunter must choose exactly the animal that needs to be removed from the herd to make room for the young, strong animals to pass on their genes. His respect for the animals and nature is of the same caliber as his rifle. He is self-sufficient in game and only shoots what he and his family eat. This comes to about 4–6 bucks per year plus 2–3 pieces of other game.

Jimmy Stening

After a vacation day out on the lake, Jimmy Stening’s father placed the perch he had caught, wrapped in foil, on the bed of coals. Jimmy still remembers the moment and the taste experience – and it was then and there that his passion for the noble art of grilling was born.

The years went by and his grilling skills grew at such a pace that a few years ago he became one of the participants in the TV show Grillmästarna. The social aspect of grilling is something Jimmy values and appreciates. For Jimmy, grilling is the ultimate way to combine business with pleasure by spending quality time with family and friends while enjoying good food.

He lives by the motto “From forest to table” and is passionate about hunting and wildlife management. Wild boar hunting is a favorite, and when he hunts he is more than happy to be accompanied by his dog Asti and/or the Guys from Tobo, a cheerful group of friends spread across central Sweden.

Therese Tillman

The Värmland girl and chef Therese Tillman loves being out in the woods and countryside. Hiking in the mountains is high on her list of favorites, and whenever she gets the chance she’s happy to travel around the world to find new inspiration, not least for her cooking. With a relatively recent hunting license under her belt, she has in more recent times increasingly focused on taking care of and preparing exquisite, lean, and climate-smart game meat.

Therese chooses to hunt with her Merkel Helix Speedster. For Therese, going lead-free is a given, so she loads the magazine with Norma ECOSTRIKE in .308 caliber – a good all-round caliber for game that can be hunted in Sweden.

Newly licensed hunter Therese has not yet found a favorite type of hunting, but she has already managed to hunt beaver, roe deer, and moose. Now she is looking forward to seeing what this season has to offer.
